Process: The cherries are pulped and then fermented in an aerobic fermentation tank for 24 hours. After the first fermentation is complete, the wet parchment is soaked. The next stage is a second fermentation in the same pond for an additional 24 hours. After the second fermentation is complete, the wet parchment is soaked again and then dried in the sun until it reaches a moisture content of 11-12%.
